How toCrush the cashew nuts with a rolling pin – a bit of texture is good.
Mash the tofu and peas together (you can grate the tofu if you like). Peel and chop the onion (medium to fine). Mix together the tofu, peas, cashews and onion. Add the curry paste and cornflour. Mix well, then shape into small burger shapes. Fry gently in olive oil until crispy on both sides. Serve with salad or stir fried vegetable mix. You can eat these hot or cold. . |
