Wash the lemon, cut into pieces and pop into a blender with the olive oil. Whizz until smooth. This can be used in the hummus recipe, and is also delicious on salads, fish and meat dishes. Lemon peel has lots of goodness in it (antioxidants and vitamin C) – such a shame to waste it, and this is surprisingly tasty. |
