HERB dressing


HOW TO

  • Into a NutriBullet or liquidiser (you can also use a stick blender), put a bunch of parsley*, a couple of sprigs of rosemary, 2-4 sage leaves and any other fresh herbs you have in the garden or can buy from the supermarket. You can also use nettle leaves, dandelion leaves, nasturtium leaves etc, if you have any. 
  • Add 1-2 tsp of mixed dried herbs (a bit of everything you have), 1-2 cloves raw garlic, a good pinch of sea salt and black pepper and a splash of cider vinegar.
  • Pour enough extra virgin olive oil to cover everything, then whizz it all up to make a green paste.

TOP TIP ​

You can use this on just about anything. It's multi-purpose - it helps encourage good bacteria (which in turn can help push out unhelpful bacteria, fungi and yeasts), gives you vitamins and minerals and it has anti-fungal and -viral properties.

Variations:

Add watercress, rocket, lemon, lime, turmeric, ginger if you have these – adjust to make it taste good.
*If you haven’t got enough parsley, use kale, spinach, watercress or rocket for the ‘base’ herb.
