Fritatta

Frittata, basically a deep omelette, is one of the easiest and quickest meals you can make. It can be eaten for breakfast, lunch, dinner or as a snack, and you can include lots of vegetables to make it even more nutritious. You only need a frying pan, which you’ll put under the grill to finish the top of the frittata.
Adapt this recipe according to ingredients you have and flavours you like.
Cheese is generally salty, so you won’t need salt if you’re making a cheese
version.

what you'll need

  • 1-2 onions, sliced or chopped, as you prefer
  • Olive oil - about 1 tbsp
  • Greens of any kind – kale, spinach, broccoli, cabbage, whatever you have – about 2
  • handfuls when chopped
  • 8 eggs, beaten
  • Salt and pepper
  • 1-2 tsp dried herbs or a handful of fresh chopped herbs

HOW TO

Pour the olive oil into the pan and gently fry the onions until translucent and beginning to turn brown at the edges.
Meanwhile beat the eggs in a bowl and add ½ tsp salt and a good ½ to 1 tsp freshly ground black pepper along with any herbs.
Add the greens to the pan and stir them until beginning to wilt.
Pour in the eggs. Cook over a low heat until the egg is mostly set.
Heat the grill, place the pan under the grill and cook to finish, until it has turned a light golden brown. Allow to settle for a few minutes in the pan before serving.
If you have a good pan (I find stainless steel works best and I avoid non-stick coatings), you may be able to slide the whole thing out of the pan and onto a serving plate. If not, cut it into portions while in the pan, taking care not to scratch the bottom, then lift each piece out using a slice.
