Easy Peasy Fish Cakes


WHAT YOU'LL NEED 

  • 3 tins of fish (I used salmon, mackerel and sardines)
  • Half a jar of green Thai curry paste
  • 1 tbsp cornflour
  • 1 medium onion

HOW TO

Simply mash the fish, with any bones and skin (this adds valuable omega 3 oils and calcium).
Peel and chop the onion (medium to fine) and add to the fish.
Stir in the curry paste and cornflour.
Mix well, then shape into fish cakes.
Fry gently in olive oil until crispy on both sides.
Serve with salad or stir fried vegetable mix.
You can eat these hot or cold.
